Nothing’s Easier than Shrimp

Looking for easy weeknight meals? School’s started and life is in full swing. Soccer, swim, homework, and more are making afternoons and evenings for families fun and busy. When everyone walks in the door tired and hungry, you’ve got to get dinner on the table fast before all heck breaks loose.

Enter shrimp to the rescue.

Shrimp is the perfect weeknight dinner solution. It packs a lot of protein into a small bite, a small, delicious bite that young and old alike love. When you’re planning your menu for the upcoming week, add one or more of the following easy shrimp recipes to the lineup:

Low Country Shrimp Boil

With 3 minutes of prep and 30 minutes of cook time, you can have a shrimp boil on the table in less time than it takes for your kids to start complaining. (That might be an ambitious claim; kids start complaining pretty quick, but you get the idea.)

Ingredients

1 12 oz package frozen SeaPak® Shrimp Scampi

2 lb quartered small red potatoes

16 oz smoked sausage cut into 16 pieces (we like Andouille for some spice)

2 tbsp Old Bay Seasoning

6 frozen mini corn cobs

Directions

  • Add potatoes, sausage, and crab boil to a large pot filled with enough water to cover all the ingredients. It will take about 10 cups of water.
  • Bring to a boil and then turn lower to medium-low and simmer for 20 minutes.
  • Add corn and simmer for 10 more minutes.
  • Add frozen shrimp scampi and simmer for 3 minutes.
  • Drain and serve immediately.

BLT Sliders

Who doesn’t love a BLT? Mix things up this week by adding a cooked Jumbo butterfly shrimp to a BLT made on a slider roll. A bit of fresh basil and a slice of fresh Roma tomato will take an ordinary dish and make it extraordinary.

Popcorn Shrimp Nachos

Nachos are another family favorite that’s made even better with shrimp. This time we’re using crispy popcorn shrimp to make this meal special.

Ingredients

1 20 oz package SeaPak Popcorn Shrimp

1 large diced tomato

8 oz white tortilla chips

8 oz package shredded sharp cheddar cheese

1/4 cup pickled, chopped jalapeños

1/2 cup BBQ sauce

4 scallions thinly sliced

Kosher salt

BBQ sauce and sour cream for serving

Directions

  • Preheat the oven to 450F.
  • Cook shrimp according to package instructions
  • Season tomato with salt and set aside
  • Place chips in a 9x13A inch baking dish.
  • Sprinkle on half the cheese, drizzle with BBQ, scatter peppers and shrimp, and then top with the remaining cheese.
  • Bake for 10 minutes until cheese melts.
  • Scatter tomatoes and scallions over the top.
  • Serve immediately, passing BBQ sauce and sour cream.

Serve shrimp for dinner this week.
